Albert's Mexican Food #3 Enchiladas

Over at Albert's Mexican Food in La Puente, California this is what passes for an Enchilada. They are ready in about five minutes and, well, just don't taste cooked enough to me. They are full of cheese without onions and a fine thing to eat, but not as good as the super nachos. I really like those super nachos.
